CHS of California was the “largest voluntarily supported counseling and adoption agency in America” and was founded in 1891 and in 1961 they formed the auxiliary that put out this cookbook. Other fundraising attempts they’ve made were bridge marathons, Santa visits, home tours, dinners, dances, and bazaars.
The dinners must have been very popular and the recipes sought after because several recipes in the book have notes about which fundraising meal they were served at.
This really is a complete book of recipes! It is nearly 200 pages long with several recipes on each page ranging from Shelley Gerbac’s Pate Maison to Lou Gill’s Samosas and Penny Haselmo’s Pumpkin Squares.
It is also the first time I’ve seen a recipe with slur against Italians in the title. Google tells me it was a popular salad in New Orleans in the 1930s and “no one was offended” but it seems like that word could have been dropped in the name by now. It does look good!
There is a section in the end that seems to be recipes contributed by children including Shelby’s Octopus Bubbles by Shelby Mays which consists of pineapple juice and club soda and Kelsey McConnell’s Egg McKelsey which are like a McDonald’s Egg McMuffin but with the addition of fresh dill.
