Peters Valley Cooks by the Peters Valley Craftsman. 1973. Peters Valley School of Craft is on federal land in the Delaware Water Gap National Recreation Area. I made a version of Brony’s French Toast with Thyme and Cheese from this book.
Peters Valley is still in existence, I took a weaving class there this week. This cookbook says the recipes were contributed by the Peters Valley kitchen by Rick and Nancy Small, and Sally Kreck, along with visiting guest cooks and residents. Today you can stay in houses on campus to teach or take a class or as a fellow and the meals seem to be from a service not, from scratch recipes like they were 50 years ago.
The recipes definitely tend to the 1970s “healthy”, lots of lentils, a surprising amount of coconut, and some international dishes.
The contributors of the individual recipes are not named but often there is a note about where the recipe came from and many recipes include someone’s name. The recipes are handwritten and there are some line drawings. Less than I would have expected from an arts community but there are a few.
