Cooking in Maryland: Beyond Beers and Crabs compiled by the Maryland Chapter Arthritis Foundation 1982
The forward reminds us that arthritis is the nation’s most widespread chronic disease. There is also a note that states that while they believe the recipes will work, they have not been tested and they are not responsible for errors.
The first section of the book is recipes from various restaurants in Maryland then it moves on to the usual soups, entrees, casseroles, and desserts. There are some regional favorites like sauerbraten with potato dumplings and, despite the title, a fair amount of recipes calling for crab. There is also an “ethnic” dishes section with Jewish, Polish, Italian, Creole, and Swedish recipes among others.
There are named contributors and a few illustrations. This is the first cookbook where they have noticed that two nearly identical recipes were submitted and they only printed one and credited both people.
